Scampi Potatoes Au Gratin

INGREDIENTS:
  • 5 large russet potatoes, peeled & diced
  • 3 tablespoons unsalted butter
  • 3 tablespoons flour
  • 4 cups low fat milk
  • 1 cup grated parmesan cheese
  • 2 tablespoons Wildtree Scampi Blend
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
PREPARATION:

Preheat oven to 350°F. Melt butter in a large sauce pan over medium heat. Stir in flour & cook, stirring constantly for approximately 2 minutes. Add milk, continuing to stir as the sauce thickens. Bring to a boil and add scampi blend and potatoes, simmer for 10 minutes. Stir in parmesan cheese, salt, and pepper. Pour into greased casserole dish & cook for 35-40 minutes or until golden brown. Let stand 5 minutes before serving.
