  1. Add 1-inch of water to a small saucepan. Cover and bring to a boil. Add eggs, return lid, and boil for 6 minutes. Transfer eggs to an ice bath or run under cold water until cool to the touch. Peel and set aside.
  2. In a large saucepan, whisk together vegetable broth, Asian Skillet Meal Seasoning, soy sauce, and sesame oil. Cover and bring to a boil over medium heat.
  3. Once boiling, add the soba noodles, mushrooms, bok choy, and carrots. Cook, uncovered, for about 6-8 minutes until soba noodles are tender.
  4. Divide soup among 4 bowls. Half eggs and serve with soup. Top with scallions and sesame seeds.
