Cheesy Grits with Sausage & Tomatoes

Grits are a popular southern dish, typically served as “shrimp and grits”. Quick cooking grits are ground to a finer grain so they cook much faster than the traditional stone-ground grits which are course and take about 30 minutes to cook.

  1. Heat Natural Grapeseed Oil a 12-inch nonstick skillet over medium-high heat. Add the sausage and bell pepper. Cook for about 5 minutes or until browned.
  2. Stir in tomatoes, garlic and Cajun Seasoning; cover and cook over medium-low heat until tomatoes are soft and skins begin to burst.
  3. Meanwhile, prepare grits. Bring chicken broth to a boil in a medium saucepan over medium heat. Whisk in grits. Reduce heat to mediumlow, cover, and cook for about 5-7 minutes or until tender. Stir occasionally.
  4. Whisk in cheddar cheese and Bruschetta Blend.
  5. Serve sausage and tomatoes over grits and garnish with parsley.
