Preheat oven to 400°F.
Grease a sheet pan. Prep
chorizo, onion, peppers, and
sweet potatoes. Drain and rinsed
black beans.
Transfer chorizo, onion,
peppers, sweet potatoes,
black beans, to the
prepared sheet pan and toss with
Fajita Seasoning and oil. Bake for
20 minutes.
Bake for 20 minutes.
Remove sheet pan from
oven. Use a spoon to make
6 wells in the ingredients
on the sheet pan. Crack an egg
into each well and bake for an
additional 7-9 minutes, or until
eggs are cooked to desired
doneness.
Serve with optional
toppings such as hot
sauce, avocado, and
cilantro.
