  1. Heat Organic Coconut Oil in a 12-inch nonstick skillet over medium heat. Add onion and saute for 3-4 minutes or until translucent.
  2. Stir in remaining ingredients, except rice and cilantro. Bring to a simmer.
  3. Stir in rice.
  4. Cover, and cook for 12-15 minutes or until rice is tender. Stir occasionally.
  5. Serve with cilantro if desired.
