Sloppy Joe Stuffed Peppers

  1. Preheat oven to 400°F. Slice tops from peppers, remove seeds, and place snugly in a baking dish.
  2. Heat Roasted Garlic Grapeseed Oil in a 12-inch nonstick skillet over medium-high heat. Add onions and mushrooms. Cook for 5 minutes.
  3. Add ground beef and cook until meat is completely browned.
  4. Stir in Sloppy Joe Blend, tomato paste, and 1 cup water. Reduce heat and simmer for 5 minutes.
  5. Fill peppers with mixture. Top each with cheese. Add remaining 1/2 cup water to the baking dish. Cover with foil.
  6. Bake for 40 minutes or until peppers are tender.
  7. *Optional: broil to brown cheese .
