  1. Preheat oven to 375°F. In a food processor, pulse beans, cauliflower, and 2 tablespoons Taco Seasoning until cauliflower is chopped and ingredients are incorporated.
  2. Transfer to a sheet pan. Bake for 25 minutes, stirring halfway through.
  3. Meanwhile, make guacamole by mashing avocados with 1 tablespoon lime juice, salt, and 2 tablespoons cilantro.
  4. Make salsa by pulsing diced tomatoes, onion, remaining 1 tablespoon lime juice, remaining 1/4 cup cilantro, and remaining 1 teaspoon Taco Seasoning.
  5. Build burritos with guacamole, cauliflower mixture, and lettuce.
  6. Serve with salsa.
