  1. Preheat oven to 350°F. Line an 8x8-inch baking dish with parchment paper and grease. Whisk together flour, oats, baking soda, salt, and Pumpkin Pie Cheesecake Blend.
  2. In a separate bowl, whisk together pumpkin puree, oil, brown sugar, eggs, and vanilla extract.
  3. Add dry ingredients to wet ingredients and stir until combined. Stir in half of the chocolate chips and half of the pepitas.
  4. Stir in half of the chocolate chips and half of the pepitas.
  5. Transfer batter to the prepared baking dish; spread in an even layer. Top with remaining chocolate chips, pepitas, and walnuts. Bake for about 20 minutes or until cooked through.
  6. Finish with flakey salt if desired. Cool slightly before cutting into squares.
